Why Slava sends people here
Hillsdale is one of the Pascack Valley towns Slava sells in, and Karl Ehmer is the kind of shop that makes a town feel like home: a real butcher on Broadway, a sausage cart out front, and a counter full of imports at Christmas. If you are moving to the Pascack Valley, start here for your first barbecue.
The story
Karl Ehmer has been a name in German meats since 1932, when Karl Ehmer opened a small store on 46th Street and Second Avenue in Manhattan. The Hillsdale shop on Broadway carries that tradition in the Pascack Valley as a family-owned butcher shop and deli, specializing in German and Italian products.
Out front, the cart sells sausages, hot dogs and Italian sausage with peppers and onions; inside, it is aged USDA Prime beef, the house wursts and, at Christmas, a counter of imported German stollen, marzipan and chocolates. Bergen County has noticed: Bergen Health & Life readers voted it tied for first as Best Butcher in 2013, it was a Best of Bergen finalist for butcher shop in 2024, and New Jersey Monthly lists it among the state's German food markets.
